Smashed Raspberry, Prosciutto and Brie Crostini

Got 10 minutes before your next dinner party begins but still wanna serve something up that your friends will be talking about for weeks to come? This crostini is it. Meaty prosciutto, creamy brie, juicy raspberry and peppery arugula it’s everything you could want in one bite. A generous drizzle of both raw honey and California Olive Ranch’s Chef’s Bottle Everyday Medium really complete it. Best served warm.


  • 1 baguette

  • 3oz of prosciutto

  • 2 handfuls of fresh arugula, roughly chopped

  • 6oz package of fresh raspberries

  • 1 wheel of brie

  • 2 tablespoons raw honey

  • 2 tablespoons California Olive Ranch Chef’s Bottle Everyday Medium

  • Pinch flaky salt


1. Preheat oven to Broil at 500F

2. Slice baguette into rounds

3. Add a portion of prosciutto about the size of the baguette round and a small slice of brie to each piece of bread

4. With a fork, smash a raspberry on top of each round

5. Place bread rounds on a baking tray and add to preheated oven

6. Broil for 5-6 minutes, until prosciutto crisps on sides and brie gets melty

7. Remove from oven and top with fresh arugula, drizzle of raw honey, generous drizzle of California Olive Ranch Chef’s Bottle Everyday Medium and a pinch of flaky salt

8. Serve immediately
