Roasted Cauliflower Salad Recipe

If you’re looking to shake up your salad routine, this roasted cauliflower salad is meant for you. It’s rich and savory with a touch of brightness from the fresh mint, and our Garlic Apple Cider Vinaigrette ties it all together perfectly.

Ingredients

  • 1 ½ heads cauliflower, cut into florets
  • 2 tbsp California Olive Ranch 100% California Extra Virgin Olive Oil
  • Salt, to taste
  • 3 cups arugula
  • 2 tbsp fresh mint, roughly chopped
  • ¼ cup crushed pistachios
  • ¼ cup fresh feta
  • ½ bottle California Olive Ranch Garlic Apple Cider Vinaigrette
  • Pepper, to taste


Instructions

  1. Preheat the oven to 425 degrees.

  2. On a baking sheet, toss the cauliflower with the California Olive Ranch 100% California Extra Virgin Olive Oil and sprinkle with salt. Roast 20-30 minutes, tossing halfway through. Remove from the oven and let cool.

  3. In a large bowl, add the arugula, roasted cauliflower, fresh mint, pistachios, feta, California Olive Ranch Garlic Apple Cider Vinaigrette, and pepper. Toss until evenly coated and serve.
