Peach Puree and Lime Zest Vanilla Ice cream with EVOO
With just a few extra ingredients and five minutes you can take plain vanilla ice cream from simple to elevated and transport yourself from the kitchen at home to a sun-drenched beach on the Italian coastline. This one ingredient peach puree, frozen lime zest and a generous drizzle of California Olive Ranch Chef’s Bottle EVOO are such easy ingredients to access but the combination of them is delightfully mind-blowing.
Ingredients
- 3 ripe peaches
- 1 frozen lime
- Vanilla ice cream
- California Olive Ranch Chef’s Bottle EVOO
- Pinch of sea salt
Instructions
- Bring a medium sized saucepan filled with water to a boil.
- Add three peaches to boiling water for 45 seconds.
- Remove peaches from boiling water and place into a bowl of iced water.
- When peaches have cooled enough to handle, gently peel skin off.
- Cut peaches in half and remove pit.
- Add peaches to a blender or food processor and blend on high until very smooth.
- Scoop out vanilla ice cream.
- Top ice cream with peach puree, zest of frozen lime, California Olive Ranch Chef’s Bottle EVOO and a pinch of sea salt.
- Serve immediately.
