Peach Puree and Lime Zest Vanilla Ice cream with EVOO

With just a few extra ingredients and five minutes you can take plain vanilla ice cream from simple to elevated and transport yourself from the kitchen at home to a sun-drenched beach on the Italian coastline. This one ingredient peach puree, frozen lime zest and a generous drizzle of California Olive Ranch Chef’s Bottle EVOO are such easy ingredients to access but the combination of them is delightfully mind-blowing.

Ingredients

  • 3 ripe peaches
  • 1 frozen lime
  • Vanilla ice cream
  • California Olive Ranch Chef’s Bottle EVOO
  • Pinch of sea salt

Instructions

  1. Bring a medium sized saucepan filled with water to a boil.
  2. Add three peaches to boiling water for 45 seconds.
  3. Remove peaches from boiling water and place into a bowl of iced water.
  4. When peaches have cooled enough to handle, gently peel skin off.
  5. Cut peaches in half and remove pit.
  6. Add peaches to a blender or food processor and blend on high until very smooth.
  7. Scoop out vanilla ice cream.
  8. Top ice cream with peach puree, zest of frozen lime, California Olive Ranch Chef’s Bottle EVOO and a pinch of sea salt.
  9. Serve immediately.
