2 cups unbleached flour1 cup sugar1 tablespoon baking powder1 teaspoon allspice1 1/2 cups instant polenta1/2 cup milk1/2 cup Lucini® Premium Select Extra Virgin Olive Oil®2 tablespoons Gran Marnier or orange liqueur1/2 cup pine nuts
Sift together first four ingredients. Stir in polenta. Mix together Lucini® Premium Select Extra Virgin Olive Oil®, milk and liqueur. Add liqueur ingredients by mixing with wooden spoon. Stir in pine nuts.Using the extra virgin olive oil, lightly oil a baking sheet. With a spoon make 1/2 inch balls of dough and place on baking sheet. Press down slightly to flatten. Bake at 350 degrees for 30 minutes until lightly golden. While still warm, dust with confectioners sugar. Serve immediately.Makes approximately 48 cookiesNot too sweet or heavy; perfect with coffee or after dinner with Vin Santo.
