Pre-heat oven to 325 degreesSeason the pork tenderloin with salt and black pepper. Roll pork tenderloin in the parmesan cheese.Heat a large nonstick oven-proof pan with olive oil until hot, but not smoking hot. Add the cheese and sear on both sides about 3 minutes. Place in the oven and cook about 20-25 minutes depending on the thickness of the tenderloin.Remove from the oven and allow to rest 3-5 minutes. Heat Lucini Sicilian Eggplant & Olive Tomato Sauce until very hot.Slice the tenderloin and place on a tray. Serve with warm LuciniI Sicilian Eggplant & Olive Tomato Sauce.
