2 lbs. Yukon Gold potatoes, peeled and halved or quartered5 cloves garlic, peeled and crushed10 large basil leaves, finely chopped3/4 cup Lucini® Premium Select Extra Virgin Olive Oil®1/2 cup milkSalt and freshly ground pepper to taste
In a large pot bring water to a boil. To boiling water add potatoes & garlic cloves. Cook for about 25 minutes until potatoes are done.Drain potatoes and garlic and put through potato ricer or food mill. Return potatoes to pot over low heat. Slowly add extra virgin olive oil & stir using a wooden spoon.Add milk and beat until fluffy. Stir in chopped basil leaves. Add salt and freshly ground pepper to taste. Serve immediately.
