Ingredients

  • 1 pound asparagus, rinsed and tough ends removed
  • 2 tablespoons Lucini® Delicate Lemon Infused Extra Virgin Olive Oil
  • Sea Salt
  • 1/2 ounce Lucini™ Stravecchio Organic Parmigiano Reggiano

Instructions

  1. Preheat the oven to 500˚F.
  2. Toss the asparagus in a large bowl with the Lucini® Delicate Lemon extra virgin olive oil and sea salt to taste.
  3. Arrange the asparagus flat in a small roasting pan and roast them for 7-8 minutes or just until tender.
  4. Shave the cheese over the asparagus and return it to the oven for two minutes more, or until the cheese melts.
  5. Serve Immediately.
